Our chef and his international brigade build the day around what the morning has brought in — sea bass from the bay, lamb from the hills, herbs gathered along the headland, olive oil pressed within sight of the sea.
Breakfast is served slowly on the terrace; dinner unfolds beneath candlelight and the long Aegean dusk. The cellar leans local — wines from Şirince, Bozcaada and the wider Aegean basin.
